CoCo Lopez Coconut Cake

Oh my goodness! My "Sweet daughter," Maranda made this cake for a friend who had been in the hospital. We went with her to take it to them. I also made Potato Soup and cornbread to go along with it, but this easy cake is so delicious that I just had to share it with you! They would not let us leave without us eating with them. We went to be a blessing to them and they ended up blessing us.

COCO LOPEZ COCONUT CAKE
1 Box Yellow Pudding Cake Mix
1 Can Eagle Brand milk
1 can Cream of Coconut
1 lg. carton Cool Whip
1 pkg. frozen coconut

Bake cake in a 10 x 13 inch pan as directed on package. While still warm poke holes in top of cake with a fork and pour Eagle Brand milk over cake. Let cool. When cool, pour 1 cup cream of coconut on cake. Ice with Cool Whip and sprinkle frozen coconut on top.
Refrigerate at least overnight. It's even better after 2 or 3 days of refrigeration "if you can wait". The extra time of refrigeration gives more moisture.

Oh My Word! That cake looks soooooo good! Will be trying that one soon, also the quiche recipe looks wonderful! I love quiche, don't know if I could get hubby to eat it or not but I think I will give it a whirl.

Congrats on finishing another quilt! Isn't it a great feeling? I found someone who will put the binding on one of mine that has needed it for two years. Yippee! I dislike putting on bindings especially if they are black, hard for me to see. Of course now that I am getting my trifocals I will be able to see better! haha!
