COCO LOPEZ COCONUT CAKE
1 Box Yellow Pudding Cake Mix
1 Can Eagle Brand milk
1 can Cream of Coconut
1 lg. carton Cool Whip
1 pkg. frozen coconut
Bake cake in a 10 x 13 inch pan as directed on package. While still warm poke holes in top of cake with a fork and pour Eagle Brand milk over cake. Let cool. When cool, pour 1 cup cream of coconut on cake. Ice with Cool Whip and sprinkle frozen coconut on top.
Refrigerate at least overnight. It's even better after 2 or 3 days of refrigeration "if you can wait". The extra time of refrigeration gives more moisture.

Congrats on finishing another quilt! Isn't it a great feeling? I found someone who will put the binding on one of mine that has needed it for two years. Yippee! I dislike putting on bindings especially if they are black, hard for me to see. Of course now that I am getting my trifocals I will be able to see better! haha!
